John H. Watson, born in Georgia ca. 1810 (Harrison p.261), was an 1850s lawyer and judge in Watsonville, and the town was named for him, although he left in 1859 and died in Nevada not long after. Harrison (p.242) says Henry Fell Parsons was somehow responsible (the explanation is cryptic) for the town being named for Watson. )
